Almond Maple Cookies

​Almond Maple Cookies


I LOVE these cookies - they are full of healthy fat, protein and fiber, simple to make, fast to cook up, and the kids love them which is a huge bonus.

Directions:
1/2 cup of almond butter (or other nut butter)
1/2 cup maple syrup
3 tbsp melted coconut oil
1tsp vanilla extract
1/2 tsp cinnamon
1 cup Bob's Red Mill All Purpose Flour
3 tbsp of ground flaxseed or chia seed
1/2 tsp baking soda
1/4 tsp salt
1/2 cup of chopped almonds (or other nuts)

Preheat oven to 350F
In large bowl mix together the almond butter, maple syrup, coconut oils and vanilla
In a separate bowl mix together the dry ingredients. 

Roll into balls and place on cookie sheet and flatten with a fork (they do not spread too much).
Makes about 12-16 cookies.
They freeze well.

Banana, Carrot and Cacao Chip Muffins

(These are delicious gluten free, sugar free, dairy free and vegan muffins)
I make lots of these, freeze and throw them in the kids lunches :)

3 ripe bananas, mashed 
1/4 cup coconut oil
1tbsp ground flaxseed with 3 tbsp water - (let it thicken)
1 grated carrot (about 1/2 cup)

Dry Ingredients:
1 cup Bob's Red Mill All Purpose Flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 cup cacao chips or raisins or walnuts

Put in a mini muffin pan - make 16 min muffins.
Bake at 350F for 18 minutes or until slighlty browned.

Homemade "Turtles" Chocolate.

If you love these chocolates, this is a delicious alternative that has tons more nutrients and so much healthier for you.

Ingredients:
Medjool date
Walnuts or pecans 
Organic cacao nibs

Directions:
Remove pit from date, place pecan or walnut inside and add cocoa nibs.
Delicious! More fat, fiber, minerals and nutrients.
